Il Paradiso di Frassina
Il Paradiso di Frassina is located 5 km north of Montalcino, at the foot of the Montosoli hill. This region is inseparable from the grape Sangiovese. The famous Chianti's are based on this grape, but also Brunello di Montalcino.
The Brunello house Il Paradiso di Frassina has become famous thanks to a special experiment. Mozart is played almost continuously in the vineyards and the cellar. The universities of Pisa and Florence examine how the plants, fruits and insect life react to this special treatment. Bose sponsors the experiment in the form of a large number of small speakers that are set up here and there. So far, the findings are serious: the leaves are thicker and larger and contain more leaf green, less need to be sprayed with copper sulphate because the plants are more resistant to fungal pressure and the grapes contain more anthocyanins and polyphenols (color and taste), just to name a few things.
The current wine estate was created in 1999 by refurbishing a farm abandoned for 50 years. The striking former lawyer-in-the-wine Giancarlo Cignozzi looked for the small-scale. Terroir became more important and the idea for the music also arose during that time. Son Ulisse is now slowly taking over the business and there is an excellent cellar master in service.
Besides the brunello plots for the famous Brunello di Montalcino and Rosso di Montalcino, the family has a plot in the south of the Maremma, where several experimental grape varieties are planted. The yield of this vineyard is used for the "12 Uve", a special cuvée with, the name says it all, twelve grape varieties.
Selvapiana is a winery with a rich history. The winery gets more and more favorable entries. In the latest version of Perswijn Magazine, both wines were the only ones to receive 4 out of 5 stars! Also by Nicolaas Klei Wijnhuis Selvapiana did not go unnoticed, he wrote years ago in "Over de Tong" already full of enthusiasm about his discovery.
Selviapiana also makes a fantastic extra virgin olive oil.
Beautiful classic wine estate in Tuscany, to be precise in the mountainous area northeast of Florence, which is called wine region "Chianti Rufina". This is one of the smallest subregions of Chianti, but one that has its own microclimate. Due to the higher location, there is stronger nighttime cooling, which means that grapes better retain their aromas during ripening. Fattoria Selvapiana is known as one of the best, if not the best, wine producer of the area.
Wine knowledge: the classic blue grape from Tuscany is the Sangiovese. This is the main component of all wines named Chianti. At the same time it is very possible in Tuscany to grow French grape varieties. For example, the "Fornace" of Selvapiana is a so-called Bordeaux blend, a wine made from Merlot, Cabernet Sauvignon and Cabernet Franc. And this certainly does not go wrong for the real Bordeaux.
By age: the wines of Selvapiana are known for their great ripening potential. Especially the "Vigneto Bucerchiale", a reserva that is only made in the good years, can survive many years in the basement.
